Mango chicken curry is a tangy and spicy preparation often enjoyed with rice. The fruity notes combined with aromatics create an irresistible fusion that is perfect to beat those summer woes. Below is a recipe every home chef must try.
2 tbsp apple cider vinegar 2 tbsp oil, ginger ½ red bell pepper 2 garlic cloves 2 tbsp curry powder 2 mangoes 1.5 cups full-fat coconut milk ⅓ cup golden raisins Coriander for garnish Salt and pepper to taste ½ kg skinless boneless chicken ½ tsp ground cumin
Saute onion, bell pepper, ginger, and garlic in hot oil.
Add powdered spices and cook them until they release aroma.
Add vinegar, coconut milk, and diced mangoes. Cook and let the ingredients cool off.
Puree the ingredients and let the paste simmer on a low flame. Add chicken and raisins.
Add more chopped mangoes and cook. Adjust salt and pepper in the curry.
Serve the curry with steamed rice and enjoy.
