Pink guava is a tropical treasure that offers a far more complex and floral fragrance than its white-fleshed counterpart. This juice captures the essence of street-side fruit stalls where guavas are often served with a signature dusting of salt and red chilli powder. It is an exceptionally high-fibre drink that provides significant Vitamin C, making it a functional powerhouse for skin health and immunity during the sweltering summer months.
3 large ripe pink guavas, chopped 2 cups chilled water 1 tbsp lemon juice 1 tsp black salt A pinch of red chilli powder 1 tbsp honey or sugar (optional) For the rim: Chilli powder and salt mix
Blend the chopped guavas with a little water until you achieve a smooth puree, ensuring you do not over-blend the seeds which can turn the juice gritty.
Strain the puree through a fine-mesh sieve into a large pitcher to remove all the hard seeds, leaving behind a velvety, thick liquid.
Stir in the remaining water, lemon juice, black salt, and chilli powder, adjusting the consistency according to your preference.
Rub a lemon wedge around the rim of your serving glasses and dip them into a mix of salt and chilli powder before pouring the chilled juice over ice.
