When dark rainy afternoons settle in, this bold fusion of Belgian-style hot chocolate and South Indian milagai podi brings an unmatched level of warmth. The roasted lentils, sesame seeds, and dried red chillies in the gunpowder podi cut through the velvety richness of melted dark chocolate, leaving a gentle, lingering heat at the back of the throat. It is an unexpectedly sophisticated monsoon treat that balances rich sweetness with a fiery, nutty kick.
2 cups whole milk 100g dark chocolate, chopped 1 tablespoon cocoa powder 1 tablespoon sugar 1/2 teaspoon gunpowder podi (milagai podi) A pinch of sea salt Cinnamon stick for garnish
Heat the whole milk in a saucepan over medium heat until it begins to steam but does not boil.
Whisk the cocoa powder and sugar into the warm milk until completely dissolved and smooth.
Lower the heat and add the chopped dark chocolate, stirring constantly until it melts into a thick and glossy liquid.
Stir in the gunpowder podi and a pinch of sea salt, pour into mugs, and serve hot with a cinnamon stick.
