When the skies turn grey, this spiced black coffee becomes the ultimate sensory experience. By infusing the brewing process with warm, earthy spices like cloves, cinnamon, and a hit of fresh ginger, you transform a standard cup of coffee into a robust, invigorating elixir. It is deep, aromatic, and provides a lingering warmth that cuts through the humidity, making it the perfect moody brew to sip while watching the rain.
2 tsp high-quality medium-roast coffee grounds  1 cup water  1/2-inch piece of ginger, crushed  1 small cinnamon stick  2 whole cloves  Optional: a tiny pinch of palm sugar for a hint of molasses sweetness
Bring the water to a gentle boil in a small saucepan, then add the crushed ginger, cinnamon stick, and cloves.
Simmer the spices for 2 minutes to allow their volatile oils to infuse the water, creating a fragrant base.
Remove the pan from the heat, stir in the coffee grounds, and let it steep for exactly 4 minutes to achieve the desired strength.
Strain the coffee through a fine-mesh sieve directly into your favourite mug, add a tiny bit of palm sugar if using, and serve while piping hot.
