Haven’t you tried the delicious and flavourful Indian recipe for Bharwa Baingan? This traditional dish is made with baby eggplants stuffed with a spicy-tangy masala, cooked to perfection, and paired with roti or paratha.
8- 10 baby eggplants 4 tbsp oil 1 tsp mustard seeds 8-10 curry leaves 1 finely chopped onion 4-5 minced garlic cloves 2 slit green chillies For the Masala: 3 tbsp roasted peanuts 2 tbsp roasted sesame seeds 2 tbsp grated coconut 2 tsp coriander powder 1 tsp cumin powder 1 tsp garam masala 1 tsp red chilli powder ½ tsp turmeric powder 1 tbsp tamarind pulp 1 tsp jaggery Salt to taste
Wash and slit the baingan, leaving the stem intact.
Blend peanuts, sesame seeds, and coconut, then mix spices, tamarind, jaggery and salt into a paste.
Stuff the baingan with masala paste.
Heat oil, splutter mustard seeds, saute onion, garlic, green chillies and cook it with the lid for 15 – 20 minutes, flipping the eggplants occasionally.
Add the leftover masala and a splash of water, cook until tender.
Garnish with coriander and enjoy with roti.
