The soft, fluffy idlis are a South Indian favourite that are now a popular breakfast choice across the country. Made with a rice and urad dal batter, idlis can be made healthier by adding chopped veggies.
1 cup rice 1/2 cup urad dal 1/2 cup chopped vegetables (carrots, beans, peas,onion) 2 tbsp chopped coriander 1 tsp ginger Salt to taste Water as required
Soak rice and urad dal separately overnight. Grind them together into a coarse batter.
Add salt and ginger, and let the batter ferment till fluffy.
Chop assorted vegetables and mix them into the batter.
Grease the idli moulds, pour the batter, and steam for 10-12 minutes.
Let the idlis cool slightly, and serve with sambar and chutney.
