South Indian tomato rice is tangy, fragrant, and ready in minutes. With tomatoes, spices, and cooked rice, it turns into a warm, comforting one-pot dish ideal for everyday meals.
2 cups cooked rice 2 tomatoes (chopped) 1 onion (sliced) 1 tsp mustard seeds ½ tsp turmeric Salt and oil as needed
Heat oil in a pan, add mustard seeds, then sauté sliced onion.
Add tomatoes, turmeric, and salt, and cook until they soften into a thick base.
Add cooked rice and mix gently until the grains are coated.
Serve warm with curd, pickle, or a simple salad.
