Thotakura curry is a healthy and flavourful South Indian dish made with amaranth leaves, onions, tomatoes, and spices. Rich in iron and vitamins, it’s a wholesome curry that pairs perfectly with steamed rice or chapati.
2 cups chopped thotakura (amaranth leaves) 1 chopped onion 2 slit green chillies 1 tsp ginger-garlic paste 1 chopped tomato ½ tsp turmeric powder 1 tsp red chilli powder 1½ tsp coriander powder Salt to taste 2 tbsp oil 1 tsp mustard seeds ½ tsp cumin seeds 2 dry red chillies 6-8 curry leaves
Heat oil, add mustard seeds, cumin, dry red chillies, and curry leaves.
Sauté onions, green chillies, and ginger-garlic paste till they turn soft.
Add tomatoes, turmeric, chilli, coriander powder, salt and cook until mushy.
Add thotakura leaves and cook until wilted and tender.
Serve hot with rice or roti.
