Masala Uttapam is a savoury South Indian pancake made with fermented rice and lentil batter, topped with a flavourful mix of chopped vegetables like onion, tomatoes and green chillies. It perfectly goes with coconut chutney and sambar.
2 cups dosa batter 1 finely chopped onion 1 finely chopped tomato 1 finely chopped green chilli 1 grated carrot 2 tbsp chopped coriander leaves 1 tsp cumin seeds Salt to taste Oil for cooking
Mix onion, tomato, chilli, carrot, coriander, and cumin seeds in a bowl, then add a pinch of salt.
Heat a non-stick pan over medium heat and lightly grease it with oil.
Pour the batter onto the pan and spread it into a thick uttapam.
Sprinkle the vegetable mixture evenly over the top and press gently.
Drizzle oil around the edges and cook until the bottom in golden brown, then flip and cook the other side.
Serve with chutney and sambar!
