Manga pachadi is a delightful South Indian dish flaunting the balance of tanginess of raw mangoes, sweetness of jaggery, and heat from spices. Tap for the recipe.
1 peeled and diced raw mango 3-4 tbsp jaggery (adjust to taste) 1 tsp mustard seeds 1-2 dried red chillies 1 sprig curry leaves 1 tsp turmeric powder A pinch of asafoetida 1 tsp oil Salt to taste 1 cup water
Boil diced raw mango with water and turmeric until it turns soft.
Stir it in the jaggery until it dissolves.
Heat oil, splutter mustard seeds, then add dried chillies, curry leaves and asafoetida.
Mix the tempering with the mango mixture, add salt, and simmer.
Enjoy it warm or cool, as a side dish!
