South Indian Rice Kanji Recipe To Make A Traditional Probiotic

Rice kanji, popularly made in the Southern and Eastern parts of India, is a humble probiotic. The porridge-like dish is quick to make, satisfying, and easy on the gut. Here’s how to make it.

Ingredients

½ cup rice 3-4 cups water Salt to taste 1-2 tablespoons curd A pinch of cumin seeds

Step 1

Rinse the rice and pressure cook it with water for 3-4 whistles.

Step 2

Once the rice is softer, mash and add a little water to get a porridge consistency.

Step 3

Add salt and curd and mix well.

Step 4

Serve as is or temper with cumin seeds and serve with papad and chutney.
