South Indian rava kesari is a close cousin of North Indian sooji ka halwa. It boasts a yellow hue, and it has a binding consistency compared to brown halwa topped with raisins and almond slivers. Check out the recipe to replicate it at home.
2 pinches of saffron 1 cup rava 1 cup sugar 5-6 tbsp ghee ¼ tsp cardamom powder 10-12 cashews 10-12 raisins 2.5 cups water
Heat ghee in a pan and sauté cashews until they are slightly brown.
Fry the raisins until they swell. Keep them aside and sauté rava.
Gradually pour hot water into the rava. It will soon absorb it, and the blend will thicken.
Add sugar and stir the mixture until it dissolves.
Add cashews and raisins to the rava kesari.
Sprinkle saffron and cardamom powder on top and serve it.
