The staple South Indian snack, murukku, made with besan and rice flour, is a perfect tea-time munchie. Minimising the oil and eliminating preservatives, here’s a murukku recipe you can recreate.
1 cup rice flour 1/2 cup besan 1 tablespoon butter 5 garlic cloves 1 red chilli 1 teaspoon red chilli powder Salt to taste 1/2 teaspoon hing 1 tablespoon white sesame seeds Oil for deep frying Little water for mixing
Grind garlic, red chilli, and a little water to make a smooth paste.
Combine rice flour, besan, melted butter, red chilli powder, salt, hing, and sesame seeds.
Add garlic paste to the dry ingredients and mix well.
Add water and knead a smooth dough. Take small portions and shape them into spirals.
Heat some oil and deep-fry the murukku till crispy. Drain the excess oil and enjoy.
