Mor Kuzhambu is a South Indian yoghurt-based curry made with buttermilk, coconut, and aromatic spices. Here’s a step-by-step recipe to follow
1 cup curd (yoghurt), whisked 2 cups water 1/4 tsp turmeric powder Salt to taste 1/2 cup cooked vegetables (ash gourd/ladyfinger) Spice Paste: 2 tbsp coconut 1-2 green chillies 1 tsp cumin seeds 1 tsp soaked raw rice 1/4 tsp asafoetida Tempering: 1 tbsp coconut oil 1/2 tsp mustard seeds 2 dry red chillies Curry leaves
Grind coconut, chillies, cumin, rice, and asafoetida to form a paste.
Mix curd, water, turmeric, salt, spice paste, and heat it, but do not boil.
Add cooked vegetables and simmer for 2-3 minutes.
Temper the mustard seeds, red chillies, and curry leaves in oil and pour over the kuzhambu.
Serve it hot, with rice.
