South Indian menu vada is everyone’s favourite because of its subtle savoury and nutty notes and crispy texture. It is often enjoyed with sambar and coconut chutney. Check out the recipe.
Oil for deep frying 1 cup urad dal Ice cold water ⅓ tsp salt 7-8 curry leaves ½ tsp pepper 1 tsp ginger 3-4 green chillies ½ tsp cumin seeds 4 tbsp chopped onion
Wash the dal and soak it overnight. Grind it in the morning with cold water, cumin seeds, salt, pepper, and ginger.
Add chopped green chillies, onions, and cumin seeds to the batter and mix the ingredients well.
Make sure to incorporate air into the paste. This will help to make vadas airy and light.
Add curry leaves. Now shape the batter into a vada on a banana leaf and slowly drop it into hot oil.
Wait for the vadas to turn golden brown and crispy before taking them out.
Serve vadas with coconut chutney and sambar.
