South Indian medu vada is a delightful snack that can be added to the breakfast or snack spread. Accompanied by sambar, coconut chutney, and tomato chutney, it makes a wholesome meal. Journal its recipe.
⅓ tsp salt 1 sprig of curry leaves 1 cup urad dal ½ tsp cumin seeds Oil for frying Ice cold water 1 tsp ginger 2-3 green chillies 4 tbsp onions ½ tsp peppercorn
Wash the dal 4-5 times and soak it for 5-6 hours. Drain the excess water and grind the dal.
Add salt and ice-cold water to grind into a smooth blend. Grind until it is fluffy.
Transfer the batter into a bowl and beat it with your hands for a minute to aerate it.
Add a drop of this batter into water and see if it floats.
Create doughnut shapes and deep-fry medu vadas.
Once the crust is crispy and golden brown, serve it with sambar and chutney.
