Filled with colourful vegetables, cooked with a blend of spices, and garnished with peanuts, masala poha is the perfect way to start every morning. Make this South Indian breakfast within 20 minutes.
1.5 cups flattened rice 1 tablespoon oil 2 tablespoons roasted peanuts ½ teaspoon mustard seeds 10 curry leaves ¼ cup chopped onion ¼ cup peas ¼ cup chopped tomato ¼ cup chopped carrot ½ teaspoon turmeric powder ¼ teaspoon red chilli powder Salt to taste Lemon juice for garnishing
Rinse the flattened rice till they soften a bit, and set them aside.
Heat some oil and saute mustard seeds, curry leaves, and chopped onion.
Mix in peas, chopped tomatoes, carrots, salt, turmeric, and red chilli powder.
When the tomatoes are soft, add rinsed flattened rice and mix well.
Cook for about 5 minutes and garnish with roasted peanuts and lemon juice. Serve hot.
