Kerala curry, also known as pacha manga curry, is a delicious raw mango curry which has a sweet, spicy, sour, and hot flavour and goes perfectly with steamed rice.
2 peeled ripe mangoes 1 cup thick coconut milk 1 cup thin coconut milk 2-3 split green chillies 1/2 tsp turmeric powder 1 tsp red chilli powder 1 tsp mustard seeds 2 dried red chillies 1 sprig curry leaves 1 tbsp coconut oil Salt to taste
In a pot, mix mango pieces, thin coconut milk, turmeric, red chilli powder, green chillies, and simmer gently until the mangoes are tender.
Stir in the thick coconut milk, simmer and then add salt.
Heat coconut oil in a small pan, add mustard seeds, let them splutter, and then add dried red chillies and curry leaves.
Pour the tempering over curry and serve with steamed rice.
