Crispy maddur vada is a South Indian recipe that perfectly fits the breakfast and snacking spread. Made with rice flour, these vadas are flat and pair well with chutney and ketchup. Here is how to make them.
½ cup semolina 1 cup rice flour 1 cup onions ½ cup maida ¼ cup curry leaves 1.5 tbsp ginger, sesame seeds 2-3 green chillies 2.5 tbsp oil 1 tsp salt 120-150ml water 2 cups oil ½ tsp red chilli powder
Slice the onions and mix them with maida, rice flour, semolina, ginger, chillies, and salt.
While you heat the oil, let the mixture sit so that the onions can release water.
Add red chilli powder and sesame seeds to the blend.
Knead the ingredients into a soft dough. You can add water if needed.
Grease a paper or banana leaf and shape the dough into vadas.
Deep-fry vadas in hot oil until crispy and serve them with chutney.
