South Indian cuisines are masters of rice-based dishes among which lemon rice is a staple and delight to indulge in. It is lightweight, giving, and a perfect way to repurpose leftover rice in the refrigerator. Check out the recipe.

200 grams rice 1 tsp oil 1 sliced green chilli 1.5 cups water ¼ tsp turmeric A pinch of hing 2.5 tbsp lemon juice Salt to taste ½ tsp chana, urad dal 10-12 curry leaves ½ tsp mustard seeds 2 tbsp peanuts
If you don’t have cooked rice, pressure-cook soaked grains on high heat. Let them cook off.
Soak chana and urad dal for 15 minutes.
Heat oil in a kadhai and saute chana and urad dal along with mustard seeds, curry leaves, green chilli, hing, and turmeric.
Add fluffed rice into the kadhai and gently stir the ingredients.
Once rice is cooked with other ingredients, add lemon juice.
Turn off the flame after a minute and garnish with coriander leaves before digging in.
