Lemon rice is the best way to use the leftover rice and turn it into a delight. This tangy preparation is light on the stomach and can be consumed if you are not feeling well. Here is a quick guide to make it.
3-4 cups cooked rice Salt to taste 1 tbsp oil 1 tsp mustard seeds 7-8 curry leaves ½ tsp turmeric powder 2 tbsp coconut slivers 2 red chillies 1 tbsp chana dal 1 tbsp coriander leaves 1.5 tbsp lemon juice
Heat oil in a kadhai and saute mustard seeds, red chillies, curry leaves, and chana dal.
Sprinkle turmeric powder and saute for a minute.
Add rice to the kadhai and sprinkle salt over it. Cook for 3-4 minutes on a low flame.
Keep the rice covered. Add lemon juice and cook for another 2 minutes.
Turn off the heat and garnish with coconut slivers and coriander leaves.
