South Indian Kothimbir Vadi Recipe For Healthy Snacking

Kothimbir vadi is a traditional Maharashtrian snack that popularly graces South Indian thalis. Made with kothimbir, aka coriander leaves and besan, follow this recipe to make the healthy snack.

Ingredients

2 cups coriander leaves 1 cup besan 1 teaspoon ginger-garlic paste 1-2 green chillies ¼ teaspoon turmeric powder ½ teaspoon red chilli powder ½ teaspoon coriander powder ½ teaspoon cumin powder 1 tablespoon sesame seeds A pinch of hing Salt to taste 1 teaspoon lemon juice Oil for cooking. Water as required

Step 1

Mix besan, turmeric powder, red chilli , coriander powder, cumin powder, and salt.

Step 2

Add coriander leaves, ginger-garlic paste, green chillies, sesame seeds, and hing.

Step 3

Mix in lemon juice and water gradually till you get a dough-like consistency.

Step 4

Take small portions and shallow fry, deep fry, or air fry as per your preference.

Step 5

Once crispy, drain excess oil, and serve with imli chutney.
