A quick and simple coconut chutney can be a delicious and flavour-packed condiment that pairs with a variety of foods. Mellow on spice and slightly coarse in texture makes this preparation special while also being time-saving.
½ cup freshly grated coconut 2 green chillies 1 clove garlic 1 tablespoon horsegram 1 tablespoon vegetable oil 1 teaspoon mustard seeds 1 red chilli, broken 4-5 curry leaves Salt, to taste
Add the coconut, green chillies, garlic, horsegram and some salt to a blender along with some water.
Grind to a smooth paste and transfer to a bowl while heating the vegetable oil in a separate pan.
Temper the curry leaves, red chilli and mustard seeds until they splutter before adding it to the coconut mixture.
Mix well to combine and serve with idli, dosa, vada.
