South Indian avial is a healthy, creamy, and delicious recipe that goes well with parotta and rice. Prepared with mixed vegetables and grated coconut, this delight can be a part of the weekend spread when you have guests coming over. Check out the recipe.
2-3 green chillies 1 cup ash gourd, pumpkin 1 cup yam, drumsticks 1 cup plantain, cucumber ½ cup French beans 1 cup grated coconut 1½ cup water 1 tsp cumin seeds 1 cup curd 2 tbsp coconut oil ½ tsp turmeric powder 10-12 curry leaves
Heat oil in a pan and saute vegetables. Sprinkle cumin seeds and turmeric powder.
Add water and let the vegetables soften.
Blend grated coconut into a smooth paste and add it to the pan.
When vegetables are done, add whisked curd and turn down the flame.
Heat coconut oil in a ladle and add curry leaves to it.
Pour the tempering over avail and enjoy.
