Khandvi is a soft, delectable Gujarati snack prepared by mixing besan with curd and other spices, and rolled into golden rings. This light snack melts in the mouth, making it a perfect choice for breakfast or evening tea snack time.
1 cup besan (gram flour) 1 cup curd 2 cups water ¼ tsp turmeric powder 1 tsp ginger-green chilli paste Salt to taste 2 tbsp oil 1 tsp mustard seeds 8–10 curry leaves Grated coconut & coriander (for garnish)
In a bowl, mix besan, curd, water, turmeric, salt, and ginger-chilli paste to make a smooth and lump-free paste.
Pour the mixture into a non-stick pan and cook on a low flame, constantly stirring to avoid the formation of lumps.
Cook till the batter gets a thick consistency and make a smooth, spreadable consistency.
Quickly spread the prepared hot mixture thinly over the oiled plates or a steel surface. Let it cool a bit.
Once cooled down, cut into long strips and gently roll up each to a neat, tight ring.
In a small pan, heat oil in a small pan and add mustard seeds and curry leaves. Let them splutter.
Pour the tempering over khandvi rolls and garnish with coconut and some fresh coriander leaves.
