Soft palak parathas are a winter comfort food, prepared by mixing leafy greens with everyday spices. These healthy parathas are easy to make and perfect to have for breakfast, lunchboxes, and dinners.
2 cups fresh spinach (palak), blanched & pureed 2 cups whole wheat flour 1 tsp cumin seeds ½ tsp turmeric powder ½ tsp red chilli powder 1 tsp salt (or to taste) 1 tsp oil or ghee (for dough) Ghee or oil (for cooking)
Blanch the spinach in boiling water for about 2 to 3 minutes, then immediately transfer to ice-cold water. Blend it with green chillies to make a smooth purée.
In a bowl, add wheat flour, cumin seeds, turmeric, red chilli powder, salt and mix everything well.
Add the spinach puree and oil to this. Knead everything well to make a soft dough.
Cover and keep the dough resting for about 5-10 minutes.
Divide the dough into equal balls, and roll them to make medium-thick parathas.
Cook on a hot, sizzling tawa with ghee or oil until the green paratha puffs slightly and turns golden from both sides. Serve hot with achaar or chutney.
