Love soft kulchas but not the maida? Try this easy atta kulcha that you can make with everyday ingredients and can cook perfectly on a tawa, without looking for an oven.
½ cup curd 1 teaspoon baking powder ½ teaspoon baking soda 1 teaspoon sugar ½ teaspoon salt 2 teaspoons oil ¼ cup lukewarm water (or as needed) 2 tablespoons chopped coriander 1 teaspoon nigella seeds (kalonji) Butter or ghee, for brushing
In a mixing bowl, take atta, curd, baking powder and baking soda. Knead this to make a soft, smooth dough. Cover and keep it resting for an hour.
Divide the dough into equal balls and sprinkle freshly chopped coriander and kalonji over each. Roll each of them gently into the shape of a kulcha.
Place the kulcha on a hot tawa and cook until bubbles begin to appear, then flip or cook for a short span over the flame to get a light charred taste.
Brush the kulchas with butter or ghee after cooking so that the kulcha stays soft and does not turn rubbery.
Pair the hot atta kulcha with your favourite curry and enjoy every bite guilt-free.
