Think muffins are always unhealthy? These chocolate quinoa muffins are soft, decadent and surprisingly filling at the same time. Prepared with cooked quinoa, cocoa and whole wheat flour, these muffins feel perfect for satisfying chocolate cravings, guilt-free.
1 cup cooked quinoa 1 cup whole wheat flour ¼ cup cocoa powder 2 eggs ⅓ cup honey ¼ cup olive oil ½ cup milk 1 tsp baking powder ½ tsp baking soda ¼ cup dark chocolate chips 1 tsp vanilla extract
Cook quinoa until it turns soft and fluffy, then let it cool down thoroughly, as warm quinoa can affect the texture of the muffin.
In a bowl, whisk eggs, honey, olive oil, milk and vanilla extract to make a smooth, lump-free batter.
In another bowl, mix whole wheat flour, cocoa powder, baking powder and baking soda.
Now, add cooked quinoa and chocolate chips to the batter.
Pour the batter into the lined muffin moulds and bake at around 180°C for around 15 to 20 minutes until the tops appear a bit cracked and also firm.
Let the muffins cool down before eating so the texture settles perfectly.
