Weekends are the best time to slow down and cook a special meal to recharge yourself for the coming week. Mushroom galouti kebabs deliver restaurant-style taste, having soft, spice-filled bites to make your weekend a bit more special.
300 g button mushrooms 1 medium onion, chopped 1 tbsp ginger-garlic paste ½ cup roasted gram flour 2 tbsp fresh coriander 1 tsp garam masala ½ tsp black pepper 1 tsp red chilli powder ½ tsp cumin powder ¾ tsp salt 2 tbsp ghee 1 tbsp oil 1 tsp lemon juice
Wash and finely chop mushrooms and cook them in a dry pan until all their moisture disappears.
In a pan, cook onions in a little oil until it turns soft. To this, now add ginger-garlic paste and the basic spices, so that the masala turns fragrant and rich.
Now, mix the cooked mushrooms, roasted gram flour, coriander, lemon juice, and the prepared masala in a bowl. The mixture should feel soft but also firm to hold its shape.
Shape the mixture into small patties. Do not press them too firmly, as the classic galouti kababs are soft and not firm.
On a tawa, heat ghee and cook the kebabs from both sides so that they have a soft centre and are lightly crisp on the edges.
Serve the prepared mushroom kababs with mint chutney and onion rings for a perfect weekend meal.
