Matcha, a finely ground green tea powder from Japan, has long been valued for its antioxidant content and distinct earthy flavour. When incorporated into pancakes, it adds both colour and depth, creating a breakfast that feels lighter while still being satisfying.
1 cup flour 1 tablespoon matcha powder 1 tablespoon sugar 1 teaspoon baking powder 1 cup milk 1 egg 1 tablespoon melted butter A pinch of salt
Whisk flour, matcha, sugar, baking powder and salt until evenly combined.
In a separate bowl, mix milk, egg and melted butter.
Combine wet and dry ingredients gently, avoiding overmixing to keep the pancakes soft.
Pour batter onto a heated, lightly greased pan and cook until bubbles form on the surface.
Flip and cook until done, then serve warm with fruit or syrup.
