As the pre-monsoon winds start to cool the air, there’s a natural instinct to reach for something cozy. However, traditional hot chocolate can feel a bit too heavy for the humid May heat. This version is lighter and more aromatic, using unsweetened cocoa and a hint of spice to provide that chocolate hit without the sugar-induced lethargy. It’s the perfect companion for a rainy afternoon on the balcony.
1 cup almond milk (or skim milk) 1.5 tbsp unsweetened high-quality cocoa powder 1 tbsp maple syrup or honey A tiny pinch of cinnamon and a pinch of sea salt 1 drop of vanilla extract
In a small saucepan, whisk the cocoa powder with a splash of the milk to create a smooth paste; this prevents the dreaded cocoa clumps.
Pour in the rest of the milk and heat over medium-low.
Stir in the maple syrup, cinnamon, salt, and vanilla.
Whisk vigorously as it heats to create a light, frothy texture. Pour into your favorite mug and enjoy while the rain settles the dust outside.
