Sindhi Kadhi Recipe: A Timeless Classic From The Heart Of Sindhi Cuisine

Sindhi Kadhi is a tangy and nutritious recipe from the Sindhu Cuisine. Unlike the other kadhis, this one is not prepared with yoghurt but is made with gram flour. The kadhi is enjoyed with steamed rice and is perfect for a comforting meal.

Ingredients

2 tbsp gram flour 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds A pinch of asafoetida 1/2 tsp turmeric powder 1 tsp red chilli powder 4-5 cups water 1/2 cup tamarind pulp Salt to taste Assorted vegetables: 10-12 pieces okra 1 cup drumsticks 1 cup cubed potatoes 1 cup cubed carrots

Step 1

Take a deep pan, heat some oil, add mustard seeds, and let them crackle. Then add cumin seeds and asafoetida to it.

Step 2

Add gram flour and roast it until it turns golden.

Step 3

Gradually add water while stirring to avoid lumps, then add turmeric, red chilli powder and salt. Let it simmer for 10 minutes.

Step 4

Add the chopped vegetables to the kadhi, and simmer it until the vegetables get tender.

Step 5

Mix in the tamarind pulp and simmer it for 5 minutes.
