Thinking of switching up your everyday meal games? Try this recipe of uttapam, loaded with vegetables and spices. A uttapam is a South Indian style of dosa with toppings as opposed to a regular dosa. It is usually served with sambar and chutney.
3 Boiled and mashed potatoes 1 teaspoon of chana dal 1 teaspoon of urad dal 5-6 curry leaves 2 green chillies 1 teaspoon of ginger 2 medium onions 1 teaspoon of rai ½ teaspoon of turmeric ½ teaspoon of red chilli powder A pinch of hing or asafoetida Rice and urad dal batter, as needed Oil as needed Salt to taste
First, heat oil in a skillet, and add the chana and urad dal. Stir in the mustard seeds until they begin to pop.
Add the asafoetida, ginger, and green onion. Let it simmer. Add curry leaves and cooked mashed potatoes.
Add turmeric, red pepper, and salt to taste. Fry the mixture for a little while. After mixing in the green coriander, extinguish the flame.
Heat the tawa and grease it with ghee, lightly. Using a ladle, spread the batter. Give it a few seconds to fry.
Cover with a layer of the prepared potato mixture. Flip it over and roast it from the other side as well.
Serve veggie masala uttampam with sambhar and chutney.
