Protein pancakes are a fantastic way to enjoy a treat while hitting your nutritional goals. By using a base of oats and protein powder, you create a pancake that is dense, satisfying, and significantly higher in protein than traditional flour-based versions. They are soft, fluffy, and pair perfectly with a light spread of nut butter or a simple fresh fruit compote, making them a staple for anyone focusing on a high-protein diet.
1/2 cup rolled oats, ground into flour 1 scoop vanilla protein powder 1 ripe banana, mashed 1/4 cup milk 1 egg
Combine the oat flour, protein powder, mashed banana, milk, and egg in a bowl and whisk until you have a smooth, thick batter.
Heat a non-stick pan over medium heat and lightly grease it with a tiny amount of butter or oil.
Pour small portions of the batter onto the pan and cook for 2 to 3 minutes until bubbles form on the surface.
Flip carefully and cook for another minute until golden brown, then serve warm with your favourite toppings.
