Skip the store-bought ones and make your own pizza sauce at home that is fresh, more full of flavour, and easy to customise as per your choice of ingredients and your taste.
2 cups tomatoes (fresh or canned) 1 tablespoon olive oil (or any available vegetable oil) 3–4 garlic cloves (chopped) 2 teaspoons dried mixed herbs ½ teaspoon chilli flakes (optional) 1 teaspoon sugar Salt to taste
Blanch and peel fresh tomatoes, then chop them roughly. If you are using canned tomatoes, crush them slightly to achieve a smooth, sauce-like texture.
In a pan, heat the olive oil on a low flame and add the chopped garlic, then sauté until they turn fragrant and the raw smell fades away.
Add the crushed tomatoes to the pan and stir everything well, and let it simmer on low heat so the flavours begin to evolve slowly.
To this, add oregano, basil, chilli flakes, sugar, salt and mix everything well to cook until the mixture thickens a bit.
To get a smoother texture, let the sauce cool down a bit and then blend it. Keep it a bit chunky if you like a more rustic texture.
Let the sauce cool down thoroughly before you use then store it in an airtight container and keep it in the refrigerator for up to a week or freezer for longer use.
