Masala khichdi is a flavorful and nutritious one-pot meal made with rice, lentils, and a blend of aromatic spices. This comforting dish is a popular choice for a quick and easy weeknight dinner. The combination of rice and lentils provides a good balance of carbohydrates and protein, while the spices add a burst of flavour. Serve masala khichdi with yoghurt or pickle for a complete and satisfying meal.
1 cup of rice 1/2 cup split yellow moong dal 2 tablespoons of oil 1 teaspoon cumin seeds 1-inch cinnamon stick 1onion, chopped 1 teaspoon of ginger-garlic paste 2 green chillies, chopped 1 cup of mixed vegetables 1/2 teaspoon of turmeric powder 1/2 teaspoon of red chilli powder 1/2 teaspoon of garam masala 4 cups of water Salt to taste
Wash and soak rice and lentils for 30 minutes.
Heat oil in a pressure cooker and add cumin seeds, cloves, and cinnamon.
Add chopped onions, ginger-garlic paste, and green chillies. Sauté until onions turn golden brown.
Add chopped vegetables, turmeric powder, red chilli powder, and garam masala. Cook for a minute.
Drain the soaked rice and lentils and add them to the pressure cooker. Mix well. Add water, salt, and pressure cook for 3-4 whistles.
Once the pressure is released, open the cooker and fluff the khichdi with a fork. Serve masala khichdi with yoghurt or pickle.
