Russian salad is a creamy blend of boiled vegetables and mayonnaise that is light and indulgent. This salad is a perfect balance of crunch, sweetness, and richness.
1 cup potatoes, boiled & diced ½ cup carrots, boiled & diced ½ cup green peas, boiled ¼ cup beans, finely chopped ½ cup thick mayonnaise 2 tbsp fresh cream 1 tsp lemon juice Salt to taste ½ tsp black pepper powder 1 tbsp chopped coriander (optional)
Boil potatoes, carrots, peas, and beans until just soft but not mushy. Drain it well and let it cool down.
In a mixing bowl, add mayonnaise and fresh cream. Whisk them together until a smooth and creamy base is formed for the dressing.
To this, add lemon juice, salt, and black pepper. Mix everything to make a mildly tangy and seasoned base for the salad.
Now, add the cooled boiled vegetables. Toss everything lightly, ensuring every piece is coated with the base.
Taste and adjust seasoning if required. You can also add some chopped coriander for extra freshness.
Keep the salad in the refrigerator for at least 15 to 20 minutes, and serve as a starter or as a side dish.
