In the fifth month of the Hindu calendar, Shravan, many devotees follow a satvik diet and observe a fast. If you’re fasting on Mondays of the holy month, try this sabudana kheer recipe for a vrat-friendly sweet.
½ cup sabudana 1 litre milk ¼ cup sugar ¼ tsp cardamom powder 8-10 cashews, chopped 8-10 almonds, chopped 1 tbsp raisins Saffron strands (optional)
Rinse and soak sabudana in water for 3-4 hours.
Boil the milk and add the soaked sabudana. Simmer for 15-20 minutes till the kheer thickens.
Stir in sugar, cardamom powder, and saffron strands. Cook for another few minutes.
Lightly roast cashew nuts, almonds, and raisins and them to the kheer.
Garnish with some more nuts and serve the sabudana kheer warm or chilled.
