Sev bhaji is a spicy Maharashtrian curry made with crispy sev in a flavourful onion-tomato gravy. Quick to make and full of bold flavours, it's best enjoyed with bhakri or chapati.
1 cup thick sev 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds 1 finely chopped onion 1 finely chopped tomato 1 tsp ginger-garlic paste ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder Salt to taste 2 cups water Chopped coriander for garnish
Heat oil in a pan, add mustard, cumin seeds, once they splutter, add onions and sauté till golden.
Mix in ginger-garlic paste, cook for a minute, then add tomatoes and cook till soft.
Add turmeric, red chilli, coriander powder, salt and cook the masala well.
Pour 2 cups of water and bring to a boil.
Just before serving, add sev to the curry and simmer for 1–2 minutes (don't overcook or sev will become mushy).
Top with fresh coriander and serve hot with roti or bhakri.
