Semiya kheer is a delicate milk-based dessert that needs no introduction. Known by various names across Indian communities, it is prepared on special occasions, but a person with a sweet tooth needs no reason to cook it. Here is the recipe.
1 litre of milk 1 cup semiya ½ cup sugar 1 tsp cardamom powder 2 tbsp cashew 2 tbsp almonds 2 tbsp raisins
Sauté cashews and almonds in a tablespoon of ghee.
Heat milk in a pan and bring it to a soft boil.
Add semiya and sugar. Cook until the sugar is dissolved and the semiya strands swell.
Add raisins and let them cook and swell.
Pound cashews and almonds. Sprinkle them on kheer along with cardamom powder.
Chill the kheer before savouring it.
