When you think of summer desserts, ice cream is always there. Different kinds, different recipes and so on. This blueberry cheesecake ice cream recipe is so yum, you can easily make it at home.
2 cups heavy cream 1 cup whole milk 1 ¼ cup granulated sugar 8 ounces cream cheese 1 ½ tsp vanilla extract 1 tsp of kosher salt 2 cups fresh blueberries ½ cup water 2 tbsp sugar 2 tsp cornstarch 1 tbsp lemon juice
Pour heavy cream, milk, sugar, cream cheese, vanilla, and salt into the container of a blender or food processor. Pulse for approximately 30 seconds.
If you don't have an ice cream machine, place the ingredients in a freezer-safe container and freeze until solid.
Combine the blueberries, water, sugar, cornflour, lemon juice, and salt in a small saucepan over medium heat.
Bring to a low boil and simmer for 5 minutes, or until the berries burst and the liquid thickens.
Pour into a small bowl, cover with plastic wrap, and chill until the ice cream is done churning.
When the ice cream has completed churning, immediately place it in a freezer-safe container.
Drop tablespoon-sized dollops of the blueberry sauce on top of the ice cream.
