Sawan Special Ghevar Recipe To Get The Authentic Taste Of Rajasthan

Ghevar is a traditional Rajasthani sweet made during festivals like Teej and Raksha Bandhan. This honeycomb-textured dessert is soaked in sugar syrup and topped with rabri or dry fruits for a rich, festive treat.

Ingredients

1 cup all-purpose flour ¼ cup ghee ½ cup chilled water (for batter) 2 cups ghee or oil 1 cup sugar ½ cup water ¼ tsp cardamom powder 2 tbsp chopped dry fruits 2 tbsp rabri Few strands of saffron

Step 1

Mix all-purpose flour with ghee, and add some chilled water slowly to make a smooth, flowing batter.

Step 2

Heat some ghee or oil in a deep, flat pan and pour the batter, spoon by spoon from a height to form a net-like structure, let it fry until golden and crisp.

Step 3

In another pan, prepare sugar syrup with sugar, water and cook until 1-string consistency, then add cardamom powder.

Step 4

Dip the fried ghevar in sugar syrup and place on a plate.

Step 5

Garnish with rabri, dry fruits, and saffron strands before serving.
