To offer Sawan Shivratri bhog, a simple homemade samak rice kheer can be a perfect option as it also abides by the fasting rules. Prepared by blending samak rice in milk and using cardamom and chopped nuts, this creamy dessert is easy to make and perfect for a traditional-style sweet offering.
½ cup samak rice 1 litre full-fat milk ½ cup sugar 4–5 green cardamom pods 10–12 almonds, sliced 8–10 cashews, chopped 1 tbsp pistachios, sliced 8–10 saffron strands 1 tsp ghee 1 tbsp raisins 1 tsp rose water, optional
Wash and rinse the samak rice nicely and let it soak for about 15 to 20 minutes, then drain thoroughly.
In a heavy-bottomed pan, heat ghee and add the drained samak rice to it. Sauté gently for about two to three minutes until lightly aromatic.
Now, pour in milk and boil it gently, then let it simmer on low flame. Keep stirring in between, until the rice turns soft.
Add sugar, crushed cardamom and saffron to the kheer and cook for another 5 to 7 minutes until the consistency thickens.
Now, add in chopped almonds, cashews, pistachios and raisins for some extra crunch and serve warm or chilled as per preference.
