Enjoy a light and airy snack during your Sawan 2026 fast with this simple vrat dhokla. Made from a fermented batter of samak rice and tapioca pearls, this steamed savoury cake is completely grain free and gentle on the stomach. Tempered with fresh curry leaves, cumin, and green chillies, it delivers all the vibrant flavours of a traditional dhokla while adhering strictly to fasting guidelines. The addition of sour yoghurt gives it a pleasant tanginess that makes it irresistible alongside fresh coriander chutney.
1 cup samak rice  1/4 cup sabudana (tapioca pearls)  1/2 cup sour yoghurt  1 teaspoon ginger green chilli paste  1 teaspoon baking soda  1 tablespoon oil  1 teaspoon cumin seeds  10 fresh curry leaves  Sendha namak to taste
Grind the samak rice and sabudana into a fine powder, then mix with the sour yoghurt and enough water to form a smooth batter, leaving it to rest for four hours.
Stir in the ginger green chilli paste and sendha namak, then quickly fold in the baking soda until the batter becomes frothy and light.
Pour the batter into a greased steaming tin and steam on high heat for fifteen minutes until a skewer inserted into the centre comes out clean.
Heat oil in a small pan, crackle the cumin seeds and curry leaves, pour this tempering over the cooled dhokla, and cut into neat squares.
