Observe the sacred fasting month with a bowl of nutritious makhana dahi chaat. Fasting during this period requires meals that provide sustained energy without violating strict dietary guidelines. Fox nuts, locally known as makhana, serve as a brilliant substitute for fried dough in a classic chaat preparation. Roasting the makhana in a touch of ghee ensures they retain a satisfying crunch even when coated in thick yoghurt. The addition of roasted cumin powder, rock salt, and fresh pomegranate seeds introduces a burst of sweet and savoury flavours. This refreshing dish is light on the stomach while delivering rich street food taste. It makes the fasting period both nutritious and highly enjoyable.

Ingredients

2 cups makhana (fox nuts)  1 tablespoon ghee  1.5 cups thick yoghurt, whisked until completely smooth  1 teaspoon roasted cumin powder  Sendha namak (rock salt) to taste  1/2 teaspoon black pepper powder  1/4 cup fresh pomegranate seeds  Fresh coriander leaves, chopped

Step 1

Melt the ghee in a wide pan over low heat and roast the makhana slowly for about 10 minutes until they become completely crunchy and golden.

Step 2

 Remove the pan from the heat, let the roasted makhana cool to room temperature, and transfer them to a wide serving bowl.

Step 3

Season the smooth whisked yoghurt with rock salt, black pepper, and half of the roasted cumin powder, then pour it generously over the crisp makhana.

Step 4

Garnish the dish immediately with the remaining cumin powder, fresh pomegranate seeds, and chopped coriander before eating to ensure the fox nuts stay crunchy.
