Sabudana kheer is a classic fasting dessert enjoyed during the holy month of Sawan 2026. Simmering soaked tapioca pearls in whole milk creates a naturally thick and creamy pudding that provides sustained energy. Infused with cardamom and saffron, this sweet dish is a comforting end to a day of fasting. Chopped almonds and cashews add a necessary crunch to the soft pearls.

Ingredients

1/2 cup sabudana (tapioca pearls) 1 litre whole milk 1/2 cup sugar 1/2 teaspoon cardamom powder A pinch of saffron strands 2 tablespoons chopped almonds and cashews

Step 1

Wash the sabudana thoroughly under running water and soak them in a cup of water for two hours until they swell and become soft.

Step 2

Boil the whole milk in a heavy bottomed pan over medium heat and add the soaked sabudana, stirring continuously to prevent them from sticking to the base.

Step 3

Simmer the mixture on low heat for 15 minutes until the tapioca pearls turn translucent and the milk thickens significantly.

Step 4

Stir in the sugar, cardamom powder, saffron strands, and chopped nuts, cooking for another five minutes before serving warm or chilled.
