Samak ke chawal, or barnyard millet rice, is popular for fasting because to its nutritional value and digestibility. It's a light, gluten-free grain that provides sustained energy without heavy feeling. Its mild flavour and versatility make it suitable for various fasting recipes.
1 cup samak rice (barnyard millet) 2 cups water 1 tbsp ghee 1 tsp cumin seeds 1-2 green chillies 1/2 tsp grated ginger Rock salt Fresh coriander leaves Lemon juice
Rinse the samak rice thoroughly under running water and soak it in water for about 20 minutes. Drain and set aside.
In a pan, heat the ghee. Add cumin seeds and let them splutter. Add chopped green chillies and grated ginger.
Add the soaked and drained samak rice to the pan and stir well to coat the rice with the ghee and spices. Pour in the water and add rock salt to taste.
Bring the mixture to a boil, then reduce the heat to low. Cover the pan with a lid and let it simmer for about 15-20 minutes.
Once the rice is cooked, turn off the heat and let it sit covered for a few minutes. Fluff the rice with a fork, garnish with chopped fresh coriander leaves, and a squeeze of lemon juice.
