The tomato martini brings a rich umami dimension to a classic cocktail base, offering a savoury profile that appeals to lovers of clean, crisp drinks. Fresh tomato water or clear tomato juice provides a subtle sweetness and acidity without the heavy texture of a Bloody Mary. Combined with vodka or dry gin and a splash of dry vermouth, it yields a crystal-clear drink with a delicate red blush. Garnish with a cherry tomato or a fresh basil leaf for a sophisticated finish.
60ml vodka or dry gin 45ml clear tomato water (strained pureed tomatoes) 15ml dry vermouth A small pinch of sea salt Ice cubes Cherry tomato for garnish
Puree fresh ripe tomatoes in a blender and strain the mixture through a fine cheesecloth to collect clear tomato water.
Fill a cocktail shaker to the brim with fresh ice cubes to ensure the drink chills rapidly.
Pour the vodka or dry gin, clear tomato water, dry vermouth, and sea salt into the shaker.
Shake vigorously for fifteen seconds, double strain into a chilled martini glass, and garnish with a cherry tomato on a cocktail pick.
