60ml London Dry Gin 15ml Dry Vermouth Ice (plenty of it) The Signature: 2–3 premium cocktail onions (pickled silverskin onions)
Chill your martini glass in the freezer for at least 10 minutes.
Fill a mixing glass with plenty of ice. Pour in the gin and the dry vermouth.
Stir (don't shake!) for about 30 seconds. You want the drink to be bracingly cold and slightly diluted, but crystal clear.
Strain into the chilled glass.
Drop in the cocktail onions. For those who enjoy a punchier, savoury profile, add a tiny splash of the onion brine, this Dirty Gibson style is a favourite among aficionados.
