Sattu parathas are a type of Indian paratha from the Bihari cuisine. Sometimes it is also stuffed with roasted and powdered gram or sattu. It is a staple and wholesome breakfast item served with brinjal curries or curd in a lot of homes in India.
2 cups of wheat flour 1 cup of sattu flour 7-8 cloves of garlic 1 piece of small ginger 2 chopped onions 1 tablespoon of mustard oil 2 teaspoons of onion seeds 1-2 green chillies, chopped 1 teaspoon of sugar 3 tablespoons of ghee 3 teaspoons of lemon juice Salt to taste
Dry roast the sattu or chickpea flour in a non-stick pan. Remove the roasted flour to a separate bowl.
Add chopped onion, chillies, coriander leaves, salt, mango pickle, mustard oil, and mix it gently.
Add water if needed to make a dough consistency mixture. Keep aside for further use.
Combine wheat flour, salt and water to prepare a regular type of dough for parathas. Cover and keep aside for 10 minutes to set.
Now divide the dough and stuffing into equal portions. Roll each portion of dough and place the stuffing in the centre, and close the edges tightly.
Roll again using a rolling pin and dust with flour if needed. Heat the tawa on medium flame.
Cook the paratha from both sides till golden brown and crisp using oil or ghee. Serve the hot parathas with curd and chutney.
